Many glucans have medical uses and are most commonly found in cellulose of plants, the bran of cereal grains, such as barley, rye, oats, sorghum, oats and wheat, the cell wall of baker's yeast, some fungi, mushrooms and bacteria. Some forms of glucans are useful in human nutrition as texturing agents and as soluble fiber supplements. In the barley malting glucans may cause severe problems such as increased brewer mash viscosity and turbidity. Increased viscosity i***irs pumping and filtration, resulting in lower efficiency, reduced amounts of extracts, and low filtration rates, and the appearance of gelatinous residues in the finished beer. The use of glucanases to reduce the glucans present in the malt barley has proven very favorable. Both the viscosity of the brewer mash and the filtration time were reduced and is valuable for the brewing industry. This important enzyme is also being used in the coffee industry for its ability to perform hydrolysis of cellulose during drying of coffee beans. Glucanase is also widely used in the animal feeds industry as an additive and as feed supplements. The ability to decompose cell walls of plants, cellulose and plant fiber and making the nutrients available can serve as a remedy to digestive problems and malabsorption of nutrients in some commercial and natural animal feeds. Most animals including humans cannot produce glucanase naturally and so has to be supplemented. It is therefore an extremely important feed and dietary additive for increasing FCR (feed conversion ratio) and as a milk yield enhancer for animals in the dairy and livestock industries.
