Protease, also called proteolytic enzyme or proteinase refers to a group of enzymes whose catalytic function is to hydrolyze or breakdown peptide bonds in proteins to their constituent monomers. In the digestive system of animals and humans, these enzymes are needed to digest protein. The use of protease in food processing has a long history. For centuries it has been used to tenderize meat. In recent times, many types of protease are produced and their capabilities nutured for different kinds of food processing. Protease can be used at various pH values, and they may be highly specific in their choice of cleavable peptide links or quite non-specific. Proteolysis generally increases the solubility of proteins at their isoelectric points. It has been found that peptides with terminal acidic amino acid residues give meaty, appetizing flavours akin to that of monosodium glutamate. Beside tenderizing meat by endogenous proteases in slaughter houses, and canning of meat products, they are also used in the baking industry. A heat-labile fungal protease is used to partially hydrolyze gluten in dough so that it is inactivated early in the subsequent baking. Weak-gluten flour is required for production of biscuits in order that the dough can be spread thinly and retains decorative impressions. They are also extensively used in the production of certain cheeses. Papain, a widely used protease, is prepared from the fruit of the tropical papaya tree. Protease is also utilized in the beer industry to prevent chill hazing problems that beer drinkers find unattractive. Proteases such as pepsin, trypsin and chymotrypsin are used as digestive aids.
